I am a member of the Firearms Engravers Guild, and to my knowledge
there are no videos devoted exclusively to the engraving of
jewelry... however, the basics of engraving - be it lettering,
ornamental, textural, or for printing purposes - are very similar.

FEGA videos are made of seminars given at the annual meeting. Most
are above the very beginner level, but I will go through the school
collection this afternoon and see which ones might do you some good.
There are other videos besides FEGA's. Somewhere in this computer is
a list of every book and video ever made that has to do with hand
engraving, but I can't find it at the moment. If there is enough
interest I'll post it to Orchid, otherwise I'll send it directly to
    you.

Your problems are perfectly normal... hand control comes with
practice, LONG practice! Your scrolls will smooth out, and you will
learn to control your depth - but only if you are willing to put in
    the time.

Bench jewelers with 20 or 30 years experience tell me that hand
engraving is the most difficult skill they have EVER tried to
acquire - even with modern day power assisted tools and techniques.
Patience is the most important requirement for hand engraving...
